Jumbo Stuffed Shells

This is a family favorite!

Mix the following for the filling:
3 cups cottage cheese (small curd)
8oz grated Mozerella cheese
2 eggs
1t choppped fresh parsley or 2t dried parsley (I like more parsley than this - it adds a nice flavor)
10 oz frozen chopped spinach (they come in rectangular boxes in the frozen vegetable section)

Cook 1lb Jumbo Shells (not large, jumbo!) as directed on the box; drain.

Pour 1/2 cup Spaghetti sauce (we like Prego from the jar) into the bottom a 13x9x2 baking dish.

Stuff each shell with about 1T of the filling. Place each shell into the dish in a single layer. Pour rest of Spaghetti Sauce (1 quart total) over the top.

Bake on 350 for 45-60 minutes.
